Traditional hoppin’ John uses bacon or fatback for seasoning, but here’s an alternative that is meatier, tastier and healthier.

Hoppin’ John and Wild Hog

You’ll need:

  • 1 cup rice
  • 1 medium onion
  • 1 cup black-eyed peas
  • 1 tablespoon cooking oil
  • Salt and pepper

Soak peas overnight. Cook peas in salt water with cooking oil. When peas are done, cook rice in a steamer with minced onions and add crumbled wild boar sausage which has been cooked separately. Add the liquid used when cooking the peas and, when the rice is done, add the peas.

It may be necessary to add a bit of additional water at this point (the sausage/rice/pea mix should have enough moisture to be fluffy when served).

Salt and pepper to taste.
